Loobya (Green Bean Salad)
Ingredients:
- 2½ lbs fresh green beans, cut
- 1 can diced tomatoes (or 3 tomatoes, peeled and diced)
- 2 onions, chopped
- 1 bulb garlic, peeled and chopped
- ¼ cup oil
- ½ tsp salt (if using fresh tomatoes, more salt may be desired)
- ¼ tsp allspice
- ¼ tsp black pepper
- ¼ tsp cinnamon
Cooking Directions:
Brown the garlic and onion in the oil until golden brown. Stir in the green beans and cover. Shake the pan occasionally to mix everything. Heat until beans are tender (half an hour or less).
Stir in tomatoes and spices. Cover and heat for about fifteen more minutes.
Can be served hot or cold.
