Kefta
Ingredients:
- 3 lbs lean meat (beef or lamb)
- 1 Medium onion, grated
- ½ bunch parsley, chopped
- 2 tsp salt
- ½ tsp black pepper
- ½ tsp allspice
- Two 4oz cans tomato sauce
- Potatoes, peeled and sliced (1 per person)
- Carrots, cut to shorter lengths (or use baby carrots)
- Water, as needed
Cooking Directions:
Preheat the oven to 425º F.
In a large pot, pour the tomato sauce and at least an equivalent amount of water. Place the carrots and potatoes in the pot and add more water, as needed, until the liquid reaches the top of the vegetables. Place the pot on the stove and and heat it until the potatoes and carrots become a little soft (not mushy).
While the carrots and potatoes are heating, mix the meat, onion, parsley, salt, pepper and allspice. Spread the seasoned meat out, thin, in a large baking pan with high sides. Place the meat in the oven.
When the potatoes and carrots start getting tender, turn off the burner. Take the meat out of the oven, and carefully pour or spoon the potatoes, carrots and sauce on top of the meat. Place the pan back in the oven and continue baking for at least an hour. The sauce should be boiling. Make sure the meat is fully cooked before serving.
